TRUFFLE POLENTA WITH SHRIMPS COVERED WITH LARD

  • a jar of truffle polenta
  • 500gr of shrimps without heads
  • some slices of lardo
  • extra virgine olive oil

Prepare the truffle polenta and let it cool down in a high pan. skin the shrimps and roll each shrimp whit a slice of lard.

When polenta has cool down cut it in slices of 1, 1 ½
and put it in a pan wich has been covered with oil. Then place the
shrimps covered with lard and cook in the oven at 250°c for about 5
minutes. Serve it very hot.
