LEG OF LAMB WITH WHITE TRUFFLE

  • a leg of lamb
  • a jar of white truffle carpaccio
  • 1 tablespoon of white truffle brecce
  • 1 tablespoon of white truffle butter
  • 2 tablespoons of grated parmigiano cheese
  • 3 eggs
  • some bread crumbs
  • some chopped almonds
  • a glass of white wine
  • extra virgine olive oil

 

Prepare a soft dressing and staff the leg of the lamb.
Then tie it well and put it in the oven with extra virgine olive oil at
200°c for about 30 minutes. Sprinke with white wine and let it cook for
about 20-25 minutes. When the lamb is cook cover it with white truffle
carpaccio.
